Air Fryer Crispy Reuben Rolls

Ingredients
12 slices soft rye bread
1 ½ cups shredded Swiss cheese
½ pound corned beef, sliced paper-thin
¾ cup sauerkraut, thoroughly drained
¼ cup melted butter (extra butter reserved, if needed)
1 cup Thousand Island dressing
2 teaspoons hot sauce (adjust quantity to match your heat preference)
Instructions
Lay all bread slices out on a clean work surface. Run a rolling pin over both sides of each slice to flatten it completely, until the bread is smooth and much thinner than its original shape. Flattening ahead of time makes rolling easier and prevents tears later.
Sprinkle roughly 2 tablespoons of shredded Swiss evenly over each flattened bread slice, then top the cheese with a thin, uniform layer of sliced corned beef.
Even if you have pre-drained your sauerkraut, press it between paper towels to absorb any leftover excess moisture—this step keeps your finished rolls crispy instead of soggy. Add 1 tablespoon of dried sauerkraut to each slice, spreading it evenly over the corned beef.
Starting from the short edge of the bread slice, roll the bread tightly around the filling, taking care not to tear the soft bread. Set each assembled roll seam-side down on your work surface as you work through the rest of the ingredients. Once all rolls are assembled, brush the outside of every roll evenly with melted butter.
Arrange the buttered rolls in a single layer in your air fryer basket (cook in batches if needed to avoid overcrowding). Air fry at 400°F (200°C) for approximately 5 minutes, until the outside of the rolls is toasted, deep golden brown, and perfectly crisp.
While the rolls cook, stir together the Thousand Island dressing and hot sauce in a small bowl until fully combined. Serve the warm, crispy Reuben rolls with the homemade dipping sauce, and set out extra hot sauce on the side for anyone who wants more heat.
