  • 2 cups shredded pre-cooked rotisserie chicken

  • ⅓ cup prepared pesto, or more/less to match your taste preference

  • 1 cup shredded Swiss cheese

  • 1 large egg white, lightly beaten (for egg wash)

  • 1 teaspoon poppy seeds


Step-by-Step Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C), and line a large baking sheet with parchment paper for easy cleanup after baking.

  2. Sprinkle a light layer of flour over a clean work surface, then roll out your puff pastry sheet to an even thickness. Cut the rolled pastry into 4 to 6 equal squares, adjusting the size based on how large you want each individual parcel to be.

  3. On each pastry square, arrange equal portions of shredded chicken, a spoonful of pesto, and a sprinkle of Swiss cheese in a diagonal strip running from one corner to the opposite corner. Leave the outer edges of the pastry clean to make sealing easier.

  4. Fold the two empty opposite corners of the pastry over the filling so they meet and overlap in the center, forming a neat, compact parcel. Press the joined edges firmly together to seal the parcel fully and stop filling from leaking while it bakes. Brush the top of each parcel with the beaten egg white for a glossy golden finish, then sprinkle the tops with poppy seeds.

  5. Bake the prepared parcels in the preheated oven for 15 to 20 minutes. They are ready when the puff pastry is deep golden brown and the cheese inside is completely melted. Let the parcels cool for 5 minutes before serving to let the filling set.
