Crispy Cheeseburger Pinwheels with Homemade Special Sauce

Ingredients

For the Pinwheels

  • 1 ½ pounds 85/15 lean ground beef

  • 1 (8-oz) package shredded sharp Cheddar cheese

  • 1 cup finely chopped yellow onion

  • 1 cup finely chopped dill pickles

  • ¾ cup chopped fresh tomato

  • 2 ¼ teaspoons kosher salt

  • 1 ¼ teaspoons garlic powder

  • ¾ teaspoon ground black pepper

  • 4 (10-inch) burrito-size flour tortillas

  • Cooking spray

For the Special Dipping Sauce

  • 1 cup mayonnaise

  • 3 tablespoons ketchup

  • 2 tablespoons yellow mustard

  • 2 tablespoons pickle relish

  • 1 teaspoon white vinegar

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder


Step-by-Step Instructions

  1. Add ground beef, shredded Cheddar, chopped onion, dill pickles, tomato, salt, garlic powder, and pepper to a large mixing bowl. Use clean hands to knead and mix until all ingredients are fully and evenly combined.

  2. Lay each tortilla flat on a clean work surface. Divide the beef mixture evenly across all four tortillas, pressing it into a smooth even layer that sticks to the tortilla. Leave a ½-inch empty border around all edges of the tortilla. Roll each tortilla tightly into a firm log, pressing gently as you roll to compact the filling. For neater, easier slicing, chill the rolled logs in the refrigerator for 20 minutes (this step is optional but highly recommended).

  3. Preheat your oven to 475°F (245°C), and position an oven rack roughly 6 inches from the top heating element. Line a baking sheet with aluminum foil, then spray the foil generously with cooking spray to prevent sticking.

  4. Slice each rolled tortilla log into 1-inch thick pinwheel slices, then arrange all slices cut-side down on your prepared baking sheet.

  5. Bake for 6 minutes, until the pinwheels just start to brown. Flip each slice over, then bake for another 4 minutes until edges begin to crisp up. Switch the oven to broil mode, and cook for 2 minutes per side, until edges are deeply browned and crispy in spots.

  6. While the pinwheels cook, make the special sauce: add all sauce ingredients to a medium bowl and stir until fully combined and smooth.

  7. Transfer finished pinwheels to a serving platter, and serve warm with the special dipping sauce on the side.
