  • 2 large eggs, beaten

  • 1 cup plain bread crumbs

  • 1 tablespoon vegetable oil (or nonstick cooking spray, for coating)


Step-by-Step Cooking Instructions

  1. Add your potatoes and kosher salt to a medium saucepan, then pour in enough cold water to cover the potatoes by 1 full inch. Set the pan over high heat and bring the water to a rolling boil. Let the potatoes cook just until they reach fork-tender doneness, which takes 8 to 10 minutes. Do not overcook them until they turn mushy, as soft potatoes will not hold their shape for stuffing. Drain all excess water from the pan, then set the potatoes aside to cool until they are safe to handle.

  2. Once cooled, slice each potato in half across its center (widthwise, not lengthwise). Carefully scoop out the soft potato flesh from the middle of each half, leaving a thin 1/8-inch border of potato attached to the skin to keep the shell sturdy.

  3. In a medium mixing bowl, combine the cooked chorizo and queso dip. Stir the mixture thoroughly until it forms a smooth, creamy, evenly combined filling.

  4. Spoon a portion of the chorizo filling into one hollowed potato half, then add a serving of shredded Monterey Jack to the matching hollowed half. Gently press the two halves back together to seal; the natural starch from the potato will help hold the seal in place. Working one at a time, dip each assembled potato bomb into the beaten egg, let any excess egg drip off, then roll it lightly in bread crumbs to coat fully. Work slowly here to avoid pulling the two potato halves apart.

  5. Preheat your air fryer to 400 degrees F (200 degrees C). Arrange the prepared potato bombs in a single layer in the air fryer basket, then lightly spray or brush the outside with oil.

  6. If your air fryer cannot fit all potato bombs at once, cook them in batches to avoid overcrowding. Air fry for 8 to 10 minutes total, until the outer coating turns golden and crispy. Let the potato bombs rest for 5 minutes before serving to let the filling set.
