Creamy Poppy Seed Apple Coleslaw

This light, tangy-sweet side dish works perfectly for picnics, barbecues, and quick weeknight meals, and comes together in just 10 minutes of prep.

Ingredients

  • 1/3 cup plain yogurt (thick, strained styles such as Icelandic Skyr® deliver the creamiest texture)

  • 1/3 cup light mayonnaise

  • 1 ½ tablespoons apple cider vinegar

  • 1 tablespoon poppy seeds

  • 1 teaspoon Dijon mustard

  • ½ teaspoon fine sea salt

  • ½ teaspoon freshly ground black pepper

  • 5 cups chopped or shredded cabbage (a mix of green and red cabbage works great for extra color)

  • 1/3 cup thin julienned carrot

  • 2 cups unpeeled diced crisp red apple (sweet varieties like Honeycrisp or Gala are ideal)

  • ½ cup golden raisins

  • Fresh parsley, for garnish

Directions

  1. In a large mixing bowl, combine the yogurt, light mayonnaise, apple cider vinegar, poppy seeds, Dijon mustard, salt, and black pepper. Whisk the mixture thoroughly until the dressing is smooth and fully combined.

  2. Add the shredded cabbage, julienned carrot, diced red apple, and golden raisins to the bowl with dressing. Stir everything until all produce is evenly coated in the creamy dressing.

  3. Garnish the finished coleslaw with fresh parsley right before serving. For a colder, more developed flavor, chill the coleslaw in the refrigerator for 1 to 2 hours before serving.
