Spicy Chipotle Ranch Coleslaw
Ingredients
Creamy Spicy Dressing
⅓ cup mayonnaise
⅓ cup sour cream
Fresh juice squeezed from 2 medium limes
2 tablespoons adobo sauce (from a can of chipotle peppers in adobo; add extra for more heat, to taste)
1 tablespoon taco seasoning (homemade or store-bought)
1 tablespoon dry ranch seasoning mix
Coleslaw Base
2 (16-ounce) bags pre-shredded tri-color coleslaw mix
2 (11-ounce) cans crisp yellow corn, fully drained
1 (15-ounce) can black beans, rinsed and drained
2 jalapeño peppers, seeded and finely diced
1 small red bell pepper, chopped
3 green onions, chopped
4 slices bacon, cooked through and chopped
1 (16-ounce) bag chili cheese corn chips (such as Fritos Chili Cheese)
Directions
Prep the dressing first: Add mayonnaise, sour cream, lime juice, adobo sauce, taco seasoning, and ranch seasoning to a medium bowl. Whisk all ingredients together until completely smooth and evenly combined.
Combine coleslaw mix, drained corn, rinsed black beans, jalapeños, red bell pepper, green onions, and cooked chopped bacon in a large mixing bowl. Toss the dry ingredients to mix, then pour the prepared dressing over top. Stir until every ingredient is fully coated in the creamy dressing.
Cover the bowl and refrigerate until you are ready to serve. Right before serving, stir in the chili cheese corn chips to keep them crunchy, or serve chips on the side for guests to add themselves.
