Bacon Cheddar Egg Salad Sandwiches

Ingredients
6 large hard-boiled eggs, peeled and chopped
¾ cup mayonnaise
½ cup cooked, crumbled bacon
2 ounces sharp Cheddar cheese, shredded
⅓ cup thinly sliced green onions
2 teaspoons Dijon mustard
½ teaspoon kosher salt
¼ teaspoon ground black pepper
4 (2-ounce) slices white bread
Instructions
Add all ingredients except the bread to a medium mixing bowl: chopped eggs, mayonnaise, crumbled bacon, shredded Cheddar, sliced green onions, Dijon mustard, salt, and pepper. Stir to roughly combine, then use the back of a fork to mash the mixture until all ingredients are evenly distributed and reach your preferred texture.
Spread half of the finished egg salad evenly across two of the bread slices, then top each with a second bread slice to form a full sandwich. Cut both sandwiches in half and serve immediately.
