Ingredients
1 English cucumber (about 1 ¼ pounds), cut into ½-inch thick round slices
1 teaspoon kosher salt
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 cloves garlic, finely minced
1 ½ teaspoons granulated sugar
1 ½ teaspoons toasted sesame oil
1 ½ teaspoons chili oil
Instructions
Place all sliced cucumbers in a large mixing bowl. Sprinkle evenly with salt, toss to coat, and let the cucumbers rest at room temperature for 30 minutes. This step draws out excess moisture to keep the final salad crisp, not watery.
After 30 minutes, rinse cucumbers under cool running water to remove all excess salt, then pat slices completely dry with paper towels.
In a separate small bowl, combine soy sauce, rice vinegar, minced garlic, sugar, toasted sesame oil, and chili oil. Whisk the mixture until sugar fully dissolves and the dressing is completely smooth.
Add dried cucumber slices to the prepared dressing, and toss to coat evenly. Let the salad rest for 10 minutes to let flavors absorb, then serve immediately.
