Creamy Tropical Fruit Salad

Ingredients

  • ½ cup Greek yogurt

  • 2 teaspoons frozen orange juice concentrate

  • 1 teaspoon honey, plus extra to adjust taste if needed

  • ½ cup canned pineapple tidbits, drained with all juice reserved separately

  • 1 cup blueberries

  • 1 cup sliced strawberries

  • 1 mango, peeled, pitted, and diced

  • 1 banana, sliced crosswise

  • 1 kiwi, peeled and sliced crosswise

  • Fresh mint sprigs (for garnish)


Instructions

  1. First, prepare the dressing: In a small bowl, combine the Greek yogurt, orange juice concentrate, honey, and roughly 1 tablespoon of the reserved pineapple juice. Stir until the mixture is fully smooth and evenly blended. Taste and adjust the dressing to your preference: add more honey one teaspoon at a time for a sweeter result, or add extra pineapple juice one tablespoon at a time to thin the dressing or boost its fruity flavor. Set the finished dressing aside.

  2. Add all cut fruit (pineapple, blueberries, strawberries, mango, banana, and kiwi) to a large mixing bowl. Pour the prepared dressing over the fruit, then toss gently to coat every piece evenly.

  3. Transfer the finished salad to a large shared serving bowl or divide it into individual serving dishes. Garnish with fresh mint sprigs if desired, and serve right away.
